Ingredients:
8 - 12 organic carrots
1/2 - 1 cup Olive oil to start
1/8- 1/4 cup fresh lemon juice to start 3 - 6 crushed garlic cloves
1/2 bunch chopped cilantro
1 - 2 tbsp Red paprika to start
1 - 2 tsp cumin to start

The how
-Boil water in a pot
-Peel and cut carrots into round pieces
Pieces shouldn't be too thin nor too thick. You don't want them to mush while cooking. -Drop cut carrots into boiling water and cook until carrot have soften but don't break so easily. -Strain carrots and run under cold water to stop them from cooking any further once done. Allow carrots to cool a bit
-In a large mixing bowl mix all ingredients together.
Measurements here are just suggested starting points, but you want enough olive oil, it should not be dry or pasty.
As you go make it as lemony as you like, as garlicky as you like.
Carrots should be nicely coated and mixed gently from the bottom to not mush them. Allow to sit, mix some more and adjust ingredients and spices as you wish.
This salad taste better the longer it sits, once it absorbed all the flavors,
so usually I will make it the day before serving it and will always adjust ingredients if needed. Oh and definitely don't be shy with that olive oil,
It is a moroccan dish after all...
