New Summer Recipe! 🤍
Ingredients:
GF brown rice pad Thai noodles - 245 grams
2-3 cups Broccoli chopped
1-2 cups Carrots strings ( I use the peeler to make strings )
2-3 cups White cabbage shredded but not too thin
2-4 cups Mushrooms chopped ( I use baby bella or white mushrooms )
1/2 cup Scallions - chopped
4-5 Garlic cloves - crushed
1-3 Lime to taste ( I like a lot of tang )
1 tsp Chilli paste or chilli flakes
Ginger grated to taste
Toasted sesame oil
Coconut amino acids or gf organic Tamari sauce
1-3 tbsp Nut or seed butter of choice ( I’ll use peanut, Almond or sunflower mainly )
Mirin rice cooking wine
Agave, maple or date syrup
Garnish:
Hemp shells
Cilantro - chopped
Scallions - chopped
Some more lime
Let’s get cooking:
-Heat your favorite skillet and add in some toasted sesame oil
-Add crushed garlic and let the aroma fill the room
-Add broccoli and cook for few min
-Add mushrooms, carrots and cabbage
-Mix well and cover for a few minutes.
-Add coconut aminos and stir allowing veggies to soften further
-Add the grated ginger
-Form a little circle in the middle of the pan and add your nut butter with a little warm water.
-Stir. Add more water if needed till it smooth and can be mixed with the veggies.
-Add a bit of your sweetener syrup
-Add some fresh lime juice to your tartiness liking
-Add your chili paste for a little heat if you wish.
-Mix it all in.
-After 1 min give it a taste test.
-Maybe you want more nut butter, maybe more amino acids or water, maybe more toasted sesame oil.
-Make this yours. Quantities of veggies and anything here are so flexible you can hardly go wrong.
Noodles: Cook your favorite GF noodles according to instructions
Assembly:
-Add your noodles into the pan and mix thoroughly
-Add more lime
-Serve and garnish with cilantro, hemp shells, scallions and more lime and your favourite hot sauce if you wish. I love lots of it!
