Pesto GF Panini

( That ended up dipped in mushroom cream sauce ) It started sane and ended insane....Made the panini using my vegan creamy avocado basil pestoAnd it ended with it being smothered by left over cream sauce from my vegan cashew cream of mushroom pasta.Both recipes are already out on site for you:-)Some of the best creations, are made combining left overs and are completely not planned. Because when you play, you always end up on top!There are no measurments here. You make your sanwich using as much of eac ingrediant as you like.

Ingredients:

GF bread. ( I use yeast free as well )

Vegan mozarella

Roasted red pepper sliced thin

Fresh tomato sliced

Vegan creamy avocado pesto - see recipe Cashew mushroom cream pasta sauce - see recipe Vegan butter

Combine and create

Layer pesto (on both sides of bread or as much as you want) tomato, salt + pepper, cheese, roasted peppers.

Heat you skillet or panini maker.

Add butter. Let it melt

If using a panini maker then spred butter on the top part of the panini as well.

Place your panini on the skilet or panini maker and press.

If using skillet you will need to turn over the panini after few minutes to get both sides sizzling and cheese melted.

Plate and dip each bite in the warm indulging mushroom cream sauce. Freaking enjoy every bite while making delightful mmmmm sounds.
